Elaboración y evaluación de una biopelícula comestible con el uso de grenetina, miel y cera de abeja, para la conservación de tres variedades de Vitis vinifera (uva)

Una biopelícula es una capa delgada, constituida por compuestos biodegradables, que provee de protección a vegetales cosechados, y permite aumentar la vida de anaquel, pues propicia un efecto barrera contra gases y vapor de agua. Vitis vinifera (uva) es un fruto con gran importancia económica en México, sin embargo, presenta problemáticas en su manejo post cosecha, por lo que el objetivo de este estudio fue diseñar una biopelícula a base de grenetina, miel y cera de abeja para prolongar su vida útil. Se elaboraron tres tratamientos, con distintas proporciones y se aplicaron a tres variedades de uvas (verde, roja y morada). La biopelícula preparada con 1 mL de miel, 0.2 g cera de abeja, 0.65 g de grenetina y 0.5 μL tween 80 mostró mayor efectividad que otras dos, ante el aplazamiento de la maduración en las uvas verde y roja, además de reducir la pérdida de humedad. A biofilm is a thin layer, composed for biodegradable substances, that provides protection to the harvested vegetables, and permits to increase the shelf life, due to provides a fence against gases and water vapor. Vitis vinifera (grape) is a fruit with great economic importance in Mexico, however, there are several problems in the post-harvest management. The objective of this study was to design a biofilm with natural gelatin, honey, and bee wax to elongate the useful life. Three treatments were elaborated, with different proportions, and were applied to three grape varieties (green, red and purple). Biofilm prepared with 1 mL of honey, 0.2 g of bee wax, 0.65 g of natural gelatin and 0.5 μL of tween 80 shown high effectiveness than the other two biofilms with respect to the maturation of the green and red grapes, and reduces the humidity loss.
