The fruits of many Mexican cacti such as pitaya, garambullo and jiotilla are distributed only in local markets because their postharvest life is short, despite its great cultural and commercial importance, however, there are few studies related to physiology, so that the objective of this work was, to describe some physical variables the fruit S. pruinosus yellow and red phenotypes during the postharvest, collected in the town of Coxcatlan, Puebla, during the month of May of the years 2014 and 2015. A design was established completely random. Physical variables (weight, firmness, total soluble solids and color) were evaluated. The results showed that the fruits with red phenotype lost less weight and presented higher firmness values (1.2 - 0.7 kgF-1) during the postharvest. It was concluded that the red phenotype may be more tolerant to handling after cutting.
