Se determinó el Índice de Saponificación (IS) de nueve mayonesas comerciales aplicando el método convencional establecido en la norma mexicana NMX-F-1734-S-1981 mediante un micrométodo basado en la misma norma. Los coeficientes de variación fueron inferiores a 2.37 y 2.96 respectivamente, señalando una reproducibilidad aceptable. Los nueve IS determinados por ambos métodos fueron estadísticamente diferentes. Además, los datos generados por ambos métodos para 7 de las 9 mayonesas, no mostraron diferencia significativa. Esta información señala que la microtécnica utilizada puede ser considerada como una herramienta alternativa para la determinación del IS en muestras de mayonesa, con el valor agregado de ofrecer menor riesgo, analizar mayor número de muestras en menor tiempo, tener un bajo costo, requerir una infraestructura mínima y ser amigable con el medio ambiente. The saponification number (IS) of nine commercial mayonnaises was determined aopplying the conventional method established in the Mexican standard NMX-F-1734-S-1981 and also by a micromethod based on the same standard. Coefficients of variation were lower to 2.37 and 2.96 respectively, indicating an acceptable reproducibility. The nine IS determined by both methods were statistically different. In addition, the data generated by both methods for 7 of the 9 mayonnaises, showed no significant difference. This information indicates that the micromethod used may be considered as an alternative tool for the determining of the IS in mayonnaise samples, with the added value of offering lower risk, analyze more samples in less time, being low-cost, require a minimum infrastructure and being friendly to the environment.
